This is by far one of my favorite salad recipes ever!
Its so easy to make and it tastes sooooo good!
For the dressing:
1/2 c – 2/3 c of oil
3 TB Sugar
1 TB Onion flakes
1 1/2 t Salt
3/4 t Pepper
2 pks of Top Ramen Chicken Seasoning Packet
A hint I learned from my mother-in law: If your lettuce is looking a bit wilted, tear it up and soak it in cold water for 10-15 minutes. It will turn crisp again!
Tear up as much lettuce as you like
Chop up chicken breasts and season, then in a bit of oil, cook them up
In the meantime break up your Ramen noodles (save those seasoning packets, you’ll need them!!). Add sesame seeds.
In a shaker bottle mix the dried onion, oil, vinegar, sugar, salt, pepper, chicken seasoning from the Ramen noodles
Shake up your dressing, pour over the top and mix well. (I added green onion and tomato for some color). Be sure to add in the chicken juices
Chill and serve!
Top Ramen Chicken Salad is sure to be a hit for family, guests and church potlucks!
