Oh happy day!!!
I can now eat potato salad without much guilt!!!
If you follow me on FB, you know how much I loooooove potato salad. I eat it all summer long.
But all of those potatoes spell a lot of carbs – something I’m really trying to cut back on.
Well, a friend gave me an idea that I just had to try.
I want to preface the recipe with this:
Yes, I did try this. In fact, I am eating some right now while typing this post. My review of the recipe is below…
Lower Carb Potato Salad
1 head of cauliflower
3 md potatoes
1 cup of sour cream (a lower-fat option: plain yogurt)
1/2 cup of mayonnaise
1/4 cup of mustard
3 large pickles
a handful of green olives
salt to taste
Boil the potatoes and eggs together in a medium-sized pot. Wash and chop the cauliflower in small chunks and boil in separate pot until only slightly tender.
When the eggs and potatoes are done, remove and cool. Skin potatoes and chop into small chunks. Peel eggs and chop. Place potatoes, eggs and cauliflower in a large bowl.
Chop pickles and olives and add to the potato mixture.
Add the sour cream, mayonnaise and mustard. I always pour in a bit of the juice from the olive jar!
Mix well. If you want it a little creamier, add a little bit of plain yogurt to save on calories!
Add salt only if needed.
Cover bowl and chill
I admit to being mildly suspicious of replacing yummy potatoes with slightly less yummy cauliflower. Not that I mind cauliflower – especially paired with broccoli and smothered in a cheese sauce – but I digress..
But my desire for potato salad coupled with my desire to shed a few pounds forced me to try this.
To be sure, the texture of cauliflower is vastly different than potatoes. I don’t think I would ever completely replace the potatoes, but going 50-50 is a healthy compromise for me and I barely notice the difference!
You still get that yummy potato salad goodness without the carb overload!
Of course you can adjust the amount of carbs by adjusting the cauliflower/potato ratio.
