Who doesn’t love pancakes with homemade maple syrup on Saturday morning?
Well, I managed to capture the goodness in a muffin the other day!
Seriously. I did!

I took my homemade muffin mix out of the freezer
I scooped out 2 cups of the mix
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
(You don’t have to. I tried it both ways but it’s better with the cinnamon and nutmeg)
In a separate bowl I mixed:
2/3 cup of milk
1 teaspoon of vanilla
1/8-1/4 teaspoon of mapeline
Then gently mix it in with the dry ingredients. (gently – do not over mix!)
I got this idea from here (the muffin recipe is great, too – I know. I tried it!):
Take an ice cream scoop and scoop the batter into muffin cups, filling them 2/3 -3/4 full
You’ll have approximately 8
Bake at 350 for about 20 minutes or so
In the meantime, make a glaze
3 tablespoons of melted butter
1 cup of powdered sugar
1/4 teaspoon of mapeline
2 tablespoons of hot water
(I got this glaze recipe from here – another very yummy muffin recipe)
When muffins are done baking take out of the oven and immediately apply glaze
It will soak into the muffin!
You can dip your muffin into the extra glaze as well!
Now just look at that and tell me that it doesn’t make you want to go make your own batch of muffins!
