I can go for a cookie anytime. I was always a store bought cookie kinda girl. As long as it is a cookie, I’ll be on it ! I don’t discriminate. Not until I learned how to bake! Homemade cookies are just simply the best. There is a great reason why realtors would have a batch of cookies with their open houses. You will always find a lit scented candle , usually vanilla or some sort of baked scent. It makes a house seem inviting!
White Chocolate Cookies
I always love when my husband comes home and our house smells good because of the freshly baked goodies. I have made this cookie dough it is my go to recipe. It is so versatile, you can use semi sweet chocolate chips, butterscotch or peanut butter chips, even M&M’s. This is a simple and yet delicious cookie recipe. Speaking of easy, Monster Chocolate Chip Cookies , Smoosh Cookies , Triple Chocolate Chip Mint Cookies are just a few of the cookies that are easy and simply the best cookies that you can make! I prefer letting my dough sit in the fridge for at least an hour before baking them. I have also made this in advance and baked the next day. The cookies always turns out great. Thick , chewy and gooey!
2 1/4 cups all purpose flour
2 cups white chocolate chips ( reserving a few for toppings)
1/2 cup butter
1 teaspoon salt
1 teaspoon baking soda
1 cup packed brown sugar
1/2 cup granulated sugar ( you can reduce it to 1/4 cup)
1 1/2 teaspoon vanilla extract
1 cup walnuts , chopped/pieces.
Line your cookie sheet with silicone liner or parchment paper.
In a large bowl, mix the flour, baking soda and salt. Set aside. In a small bowl, combine the two eggs and the vanilla extract. Set aside. Cream the sugars and the butter together. Beat until light and fluffy. Add in the eggs with vanilla.
Beat in the dry ingredients – flour bowl. Mix until incorporated, Fold in the cup of walnuts .
Followed by white chocolate chips.
Let it sit in the fridge for at least an hour ( or overnight). After an hour or so, Place a rounded spoonful of the dough onto the prepared cookie sheet.
Bake at 350 degrees for 11minutes. It may look undone but let it “cook” or set on the cookie sheet. Add additional white chocolate chips on top of the cookies.
You can also use pecans with these cookies! I may have to experiment and incorporate caramels and chocolate with these cookies. Now that we are in Fall season , I have a pretty good excuse for gobbling these with a pumpkin spice latte.
Golden on the outside, thick and chewy on the inside …just how I like my cookies!
