There is just not enough time in a day. If you are a mom, I am sure that you will definitely agree with me. There are days that I am so productive ( with the help of organization) and there are those days that I really need to breathe. You just can’t do it all. Over the years of staying at home with our girls ( add blogging, homemaking and church commitments in there) I’ve learned to give myself grace too. I know the Lord wants me to be productive and to be goal oriented but I also know that I am called to love and treasure the family that was given to me.
Over the years too, I had learned to make budget and time saving meals. I have some “go to” budget meals most esp. when we are trying to save up for something big. I had also learned to cook healthy meals by substitution. This recipe is so easy and it would only take you half an hour to cook it. For clean eating families, I know that the Turkey Kielbasa is not a healthier option but it is much better than the regular kielbasa sausage. You can also substitute some canned tomatoes for a low sodium. You can use organic too. I was so stoked when Aldi finally opened a store near us. They do have affordable organic products. This Tortellini Sausage soup is so tasty, budget friendly and most of all a quick meal. It is ready in less than an hour..which is all you need anyway on a busy day.
1 package Turkey Kielbasa, sliced
1 tbsp olive oil
1 medium yellow onion, chopped
1 garlic clove, minced
1 tbsp. tomato paste
1 28oz can low sodium diced tomatoes
2 cups baby spinach
4 cups low sodium chicken broth or better than bouillon (prepare according to directions /diluted with water)
1 tsp salt
1 tsp. pepper
1 package 9oz cheese tortellini.
Heat oil in a large pot. Saute onions until translucent. Add garlic. Saute until fragrant. Stir in tomato paste and the sliced of turkey kielbasa. Cook for 5 minutes. Add the diced tomatoes , broth and tortellini.
Season with salt and pepper. Bring to a boil. Reduce the heat and let it simmer gently for about 5 minutes. Add the spinach and cook for another 3 minutes.
All you need is 30 minutes to cook this delicious soup.
